Ingredients
- 1 tablespoon Capers, drained and rinsed
- 1 Garlic, crushed
- 1/2 Lemon, zested
- 2 tablespoons Olive oil
- Salt and pepper
- 1 Tomato, deseeded and julienne
- 2 smalls zucchini, peeled into strips

Cooking Instructions
Step 1
- Toss the zucchini strips with the oil, lemon zest and juice, garlic, salt and pepper. Set aside for 30 minutes to marinate.Divide between 2-3 plates and top with capers, tomato julienne.
